Egg Cheese & Bacon Casserole (Another Great POST Workout meal) (P/S/V)

  • What you need: 13×9 glass pan coated with coconut oil
  • Ingredients: In the pan place: 2 cups organic hash browns 1 cup cured Canadian bacon (no nitrates); scramble 8 farm fresh eggs with 1/2 cup of 2% (or higher fat milk) (Find a local farm you can trust) 1/2 cup mild cheddar cheese*
  • Directions: Place hash browns, chopped up bacon and egg mixture in the pan Add 1/2 cup raw mild cheddar cheese on top Bake: 325 degrees for 40 mins or until firm When it comes out of the oven place 2 cut-up scallions over the whole pan Add salsa over it (optional)
  • Serves: 4

*Now remember cheese is a fat but it’s 1/2 cup for 4 servings…so it’s just a taste.

There you have it: Amazing Egg & Cheese Bacon Casserole!
